Protein-Packed LENcakes Okonomiyaki
Ingredients
- LENcakes premix – 30g
- Cabbage – 50g (finely shredded)
- Mushroom – 30g (thinly sliced)
- Spring onion – 1 sprig (thinly sliced) + extra for garnish
- Water – 30ml (adjust as needed)
- Salt – to taste
- Oil – 2 tbsp (for frying)
Dipping Sauce
- Soy sauce – 2 tbsp
- Sweet chili sauce – 1 tbsp
- Sesame seeds – optional
Method
- In a medium-sized bowl, combine the LENcakes premix, cabbage, mushrooms, spring onion, and water. Add a pinch of salt and mix until it forms a thick, pasty batter (vegetables should dominate).
- Heat 1 tbsp of oil in a non-stick frypan over medium heat. Spoon the batter into the pan and spread it gently into a thick pancake shape. Cover with a lid and cook for 2-3 minutes, or until golden on the bottom.
- Carefully flip the pancake, drizzle another 1 tbsp of oil around the edges, and cook the other side until golden and cooked through.
- Garnish with extra spring onion and serve hot with the dipping sauce.
- To make the dipping sauce, whisk together soy sauce, sweet chili sauce, and a sprinkle of sesame seeds for added flavor.
