LENcakes Okonomiyaki

Protein-Packed LENcakes Okonomiyaki

Ingredients

  • LENcakes premix – 30g
  • Cabbage – 50g (finely shredded)
  • Mushroom – 30g (thinly sliced)
  • Spring onion – 1 sprig (thinly sliced) + extra for garnish
  • Water – 30ml (adjust as needed)
  • Salt – to taste
  • Oil – 2 tbsp (for frying)

Dipping Sauce

  • Soy sauce – 2 tbsp
  • Sweet chili sauce – 1 tbsp
  • Sesame seeds – optional

Method

  1. In a medium-sized bowl, combine the LENcakes premix, cabbage, mushrooms, spring onion, and water. Add a pinch of salt and mix until it forms a thick, pasty batter (vegetables should dominate).
  2. Heat 1 tbsp of oil in a non-stick frypan over medium heat. Spoon the batter into the pan and spread it gently into a thick pancake shape. Cover with a lid and cook for 2-3 minutes, or until golden on the bottom.
  3. Carefully flip the pancake, drizzle another 1 tbsp of oil around the edges, and cook the other side until golden and cooked through.
  4. Garnish with extra spring onion and serve hot with the dipping sauce.
  5. To make the dipping sauce, whisk together soy sauce, sweet chili sauce, and a sprinkle of sesame seeds for added flavor.
